Camp Cuisine – Chicken Pad Thai

Chicken Pad Thai

Ingredients for Chicken and marinade:
1 LB boneless, skinless chicken breast cut into 1 inch wide strips
1 TBL garlic puree
0.25 cup fresh lemon or Lime juice
0.25 cup soy sauce
0.25 cup rice vinegar
2 TBL sugar
1 TBL fresh Ginger puree

Combine all ingredients and marinate overnight or for at least 8 hrs.
Set aside until you are ready to make the final dish.

Ingredients for Simple Syrup:
0.25 cup rice vinegar
4 ts sugar

Combine ingredients under a medium flame in a small sauce pan until the sugar is fully dissolved and is syrupy in consistency.

Ingredients for Pad Thai:
1 package of wide pad Thai rice noodles cooked to packaging instructions
1 TBL canola Oil
0.5 cup finely diced yellow onions
0.25 cup red bell pepper
0.25 cup green bell pepper
1 TBL garlic puree
1 TBL Ginger Puree
2 eggs
1 TBL fresh Lime Juice
1 TBL squid Fish Sauce
4 TBL simple syrup
1 TBL Soy Sauce
1 LB marinated chicken strips
0.5 cup Bean sprouts
2 TBL sliced green onion
1 TBL finely chopped birds eye chilies (optional for spiciness) 

Drain marinated chicken using a fine mesh strainer. Combine lime juice, soy sauce, simple syrup and fish sauce together and set aside. Heat a large non-stick sauté pan on high heat until pan starts to smoke. Add canola oil and coat pan. Add chicken strips and sauté until they have sear marks on all sides. Push chicken to the side of the pan. Sautee onions, red and green peppers, garlic puree and ginger puree. Sauté for 1 minute, mixing only those ingredients continually in the center of pan.  Push this center mixture to the side of pan with chicken. Place noodles in center of pan and drizzle your liquids (fish sauce, lime juice, simple syrup and soy sauce) all over your noodles only. With a pair of tongs turn noodles over and over in the sauce until all noodles are coated and sauce has cooked into noodles (about 1 minute). Make a hole in the middle of the noodles in the middle of the pan where you can see the bottom of the pan again. Place eggs in this center hole and mix eggs only. Let eggs set for 30 seconds and mix only eggs again. They should be scrambled. Mix all the cooked items together. Optional: (Add chopped birds eye chilies and mix). Place noodles onto a serving dish. Garnish with bean sprouts and green onion slices on top of noodles and serve.
